3 Healthy and Delicious Winter Soup Recipes

Ingredients:
- 1 ½ pounds baby potatoes
- Fennel
- 10 ounce jar of artichokes
- Parmesan cheese
- Heavy cream (or double cream if available)
Directions:
Rinse and cut potatoes in half.
Add grated parmesan cheese and 3 ½ ounces of cream to the pot after it’s out of the oven and mix until everything melts. Let the pot simmer.
Add a bit of salt and pepper–the fennel bulbs add a lot of flavor. Bake for another 20 minutes or until golden brown.
2. Black-eyed pea soup recipe
Ingredients:
- Fresh or can of black-eyed peas
- 2 smoked turkey necks
- 2 quarts of the broth of your choice
- Greens of your choice
- Collard greens
- Diced tomatoes
- Garlic
- Olive oil
Directions:
Use your pan on low heat or your crockpot on low or simmer.
Saute your vegetables in olive oil for two to three minutes or until softened.
Add the peas, stock, and turkey necks that are drained and rinsed. Add seasoning such as paprika, and thyme, and stir it all together.
Let the beans soften for about 30 minutes.

Hot water cornbread pairs perfectly with this classic southern dish. Think of it as fried cornbread. It’s super simple to make. Combine cornmeal, sugar, hot water, and your choice of fat into a patty that you fry and drain.
You can either crumble it into the soup or use it to scoop up soup from the bowl.
3. Brussels sprouts and cabbage soup recipe
Ingredients:
- 2-3 red onions, diced
- 2-3 carrots, diced
- 1 ½ pounds of Brussels sprouts, cut in half
- 1 head of cabbage, chopped
- Chicken stock
Directions:
Simmer for 30 minutes or until everything is tender.
