4 Cozy Budget Casseroles to Feed Your Family This Winter

1. French onion beef casserole
All you need is a creamy soup, some French onion dip you find in the refrigerated section, noodles, and beef.
Ingredients
- 10 ounces dried egg noodles
- 1 pound lean ground beef
- 2 cans (10.75 ounces, each) of condensed cream of mushroom soup
- 1 (15-ounce) jar Lay's French Onion Dip
- 1 cup of French's fried onions
1. Cook the beef
Cook the beef until it’s no longer pink and drain the ground beef. Add in two cans of cream soup and a container of the French onion dip. Mix it together.
2. Add the noodles
Add in the al dente noodles you’ve cooked and drained.
3. Add the mixture to a pan
Put the mixture in a greased 9 x 13 baking dish. Preheat the oven to 350 degrees Fahrenheit.
4. Add toppings and bake
Top it with French fried onions. Bake for 30 minutes
Here’s the result! I served it with some sweet carrots on the side.
2. Dorito casserole
I needed to use up this bag of Doritos in the pantry.
Ingredients
- 1½ to 2 pounds of ground beef
- 1 package of taco seasoning per pound of meat
- 1 10-ounce can of tomato soup
- 1 sheet of crescent dough
- 2 cups Mexican-style shredded cheese
- 2 cups crushed Doritos
1. Cook the beef & line the casserole dish
Cook and season the ground beef until it’s no longer pink. Drain it.
Line the bottom of a greased casserole dish with crescent rolls unrolled. Pinch the seams closed to make it a solid sheet.
2. Add soup and taco seasoning
Add a can of tomato soup and a packet of taco seasoning to the beef. Mix.
3. Layer the meat on top of the crescent dough
Layer the meat mixture on top of the crescent dough in the casserole dish.
4. Top with cheese and Doritos
Top that with cheese. Top the cheese with crushed Doritos. Bake at 350 degrees Fahrenheit for 18 to 20 minutes.
Here’s the result! I served it with some rice mixed with salsa and chicken bouillon powder. You can top the casserole with some extra cheese, sour cream, black olives, or even guacamole.
3. Cheesy broccoli and cauliflower bake
I had some heavy cream in the refrigerator that I needed to use up.
Ingredients
- 2 bags of defrosted cauliflower and broccoli blend
- Salt, pepper, garlic powder, and onion powder
- 2 cups heavy cream
- 1 package of cream cheese
- 8-ounce bag of cheese (any kind)
1. Season the vegetables
Grease a baking pan. Put in the vegetable mixture. Season to taste and mix together to coat the vegetables.
2. Add the cream
Pour heavy cream over the vegetables.
3. Add the cream cheese
Dot the tops of the vegetables with cubes of cream cheese.
4. Top with cheese & bake
Top with half the bag of cheese.
Bake at 350 degrees Fahrenheit for 15 minutes. Take the pan out of the oven, toss the ingredients, and put it back in the oven for 10 minutes.
Take the pan out again and toss the ingredients and add the rest of the cheese on top. Put the pan back in the oven and let the cheese get very hot and melty.
Here’s the result! You can also add in protein (chicken bits) if you’d like.
4. Chicken cobbler/chicken pot pie casserole
Ingredients
- 4 cups chicken cooked and shredded
- 1/2 cup butter
- 12 ounces frozen carrots and peas
- 2 cups milk
- 11-ounce box Red Lobster Cheddar Bay Biscuit mix
- 10-ounce can cream of chicken soup
- 1 1/2 cups chicken broth
1. Prep the soup, biscuit mix & protein
Whisk cream soup with chicken broth. In another bowl, make the biscuit mix with the milk.
Melt a stick of butter in a foil pan. Add in the cooked protein (chicken or turkey).
2. Layer the casserole in a pan
Layer a bag of frozen vegetables over that. Top that with biscuit mixture.
3. Add the chicken broth and cream soup
Add the chicken broth and cream soup over all of that. It will be very soupy at first.
4. Bake
Cook for about 1 to 1½ hours at about 350 degrees Fahrenheit. The top got a little too brown, but I put some foil on top at the end so the entire top would not become too brown.

That French onion casserole reminded me of when I was a broke college student and my roommate and I frequently combined ground beef, canned green beans, and potatoes with cream of mushroom soup in the crockpot. I'll have to modify it with your recipe for an easy one dish wonder.
