3 Easy One Pot Meal Ideas

Today, I have three easy one-pot meals for you to try.


Sometimes, when you are really busy, having a one-pot or a one-pan meal can help. It's quick to make, and you can often make these healthy and filling for you and your family. You'll also benefit from the easy clean-up after dinner.


I've been looking for some of the best easy dinner ideas that can be made in one pot. I have a one-pan honey garlic chicken, a one-pot broccoli pasta, and a one-pot turkey taco chili mac.


Let's get cooking so I can show you how they're all made!


One pan honey garlic chicken ingredients

1. One pan honey garlic chicken

This is full of protein with a sweet honey garlic glaze, and it was a huge hit.


Ingredients:

  • 3 Tablespoons olive oil, divided
  • 2 Tablespoons honey
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon minced garlic
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 pound russet potatoes
  • 1 pound boneless skinless chicken breast (4 small)
  • 5 cups fresh broccoli


Start by preheating the oven to 400 degrees. Dice the potatoes into small pieces. I used a russet potato, but red or gold potatoes would also work.


Next, we're making the sauce. Add olive oil, honey, Dijon mustard, garlic, basil, oregano, salt, and pepper in a small bowl, and mix all of that together. 


Drizzle the potatoes with olive oil on the baking sheet and sprinkle them with salt and pepper.


Make some room, then place the chicken breast on the baking sheet. My chicken was a little thick, so I sliced them in half to help them bake faster.


Spoon the honey garlic sauce over the chicken and bake it for 25 minutes.


For the last 15 minutes of cooking, add the broccoli and mix it around a little bit to coat it in the sauce.

2. One pot broccoli pasta

This is super easy with just a few ingredients.

Ingredients:

  • 8 ounces small pasta
  • 5 cups raw broccoli, chopped into smaller pieces
  • 1 Tablespoon minced garlic
  • 1/4 cup shredded Parmesan cheese
  • 2 Tablespoons olive oil
  • Salt and pepper, to taste


While a pot of water brings to a boil, chop the broccoli into small pieces. Make them small if you can. That way, you can have bite-sized pieces and not have to stuff a huge piece of broccoli in your mouth. 


Once the water comes to a boil, add shell pasta and the broccoli and cook it for six or seven minutes, just enough to cook the pasta al dente. Save about a cup of the pasta water, then drain the rest.


Place the pot back on the stove and add some olive oil. Add some garlic, cook it for 1 to 2 minutes, then add the pasta and broccoli to the pot.


Add some olive oil, salt and pepper, shredded parmesan, and some pasta water.


Mix all of that together, adding more water if it needs it. Once it's done, divide it onto plates or bowls and add more parmesan

on top.

This was super good, and it was really quick to make. 


3. Turkey taco chili mac

This has a lot more ingredients than the others, but it requires only a little bit of prep.

Ingredients:

  • 1 1/4 pound ground turkey
  • 1 packet taco seasoning
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 Tablespoon minced garlic
  • 15-ounce can diced tomatoes
  • 15-ounce can kidney beans
  • 8-ounce can tomato sauce
  • 1 3/4 cup chicken broth
  • 1 3/4 cup water
  • 8 ounces elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1/2 cup cilantro


Start by adding ground turkey to a large pot and cook it for three or four minutes. While it's still cooking, add diced onion and the bell pepper and cook all of it together.


Once the meat is fully browned, add garlic and cook it for another minute or two.


Next, add a can of dry, drained kidney beans, tomato sauce, diced tomatoes, chicken broth, water, and taco seasoning and bring that to a boil.


Cover the pot and let it simmer for 15 minutes. 


Next, add the macaroni noodles and cook it for another 6 minutes, just enough to cook thoroughly. Stir it every minute or so to prevent sticking on the bottom.


Finally, add shredded cheese on top and let it melt for 5 minutes.


Serve this with cilantro on top and maybe even some sour cream or diced avocado.
