Miranda’s most recent pantry challenge of 2023 is all about getting creative in the kitchen with a focus on clearing out your condiments. In fact, many of the meals she invents at home have only a couple of ingredients in them, so it’s pretty likely that you can recreate them on your own without a lot of effort or substitutions on your part.


The first meal in this particular pantry challenge is tofu rice bowls, and Miranda demonstrates how to make this dish using Spanish rice, mixed vegetables, firm tofu, a shallot, garlic salt, ginger, coconut aminos, and sweet chili sauce.


Satisfied with the many lunches this cooking session created, Miranda says this recipe is packed with protein and very flavorful.

Pantry challenge

The next meal Miranda whips up during her pantry challenge requires only two ingredients: red lentils and tofu. While she loves this simple recipe when it's fresh, she does admit that the reheated version isn’t quite as good. Nevertheless, it’s a convenient way to make a meal with leftover pantry and refrigerated items.


Other recipes that evolved as a result of this pantry challenge include black bean burgers, which she makes out of canned black beans and mashed potato flakes, and marinated tofu, made from tofu, minced garlic, stone ground mustard, Green Dragon hot sauce, and harissa.


You simply can’t eat better for less, nor would you want to.
