5 Easy, Budget-Friendly Family Meals for 2025
I’m back to share some really delicious dinner ideas with you. These meals are quick, budget-friendly, and made with just a few ingredients, perfect for busy weeknights. Follow along with me as I get to cooking!
1. Cheeseburger tortellini
If you’ve got a pound of ground beef and little time, cheeseburger tortellini is a winner. I browned the beef with onion powder, salt, and pepper, then added garlic, frozen tortellini, cheddar cheese soup, Rotel, milk, mustard, and ketchup.
After letting it simmer, I topped it with shredded cheddar and broiled it until bubbly. I served it with garlic bread and zucchini, and everyone went back for seconds! This quickly became a family favorite.
2. Chicken taquitos
My kids love frozen taquitos, so I decided to try a homemade version. I cooked chicken breasts in the crockpot with taco seasoning, salsa, and cream cheese, then shredded the meat and added shredded pepper jack.
After rolling the mixture into corn tortillas, I fried them until crispy. Served with queso, Mexican rice, and lime wedges, these taquitos turned out flavorful, creamy, and perfectly crunchy.
3. Meatball pot roast
This crockpot dish is perfect for fall and so easy to make. I layered frozen meatballs, baby carrots, and celery, then poured over a mixture of gravy mix, water, and onion soup mix. Topped with sliced butter, it cooked for three hours and made the most tender vegetables and rich gravy.
I served it over mashed potatoes, and even though I don’t always love frozen meatballs, this recipe completely won me over.
4. Creamy garlic pork bites
I tried out pork loin from Aldi and was thrilled with how well it cooked up. After cutting it into chunks and seasoning, I seared the pork until golden.
Using the drippings, I made a sauce with butter, garlic, flour, broth, cream, parmesan, and lemon juice, and the flavor was absolutely incredible.
I tossed the pork back in and served it over rice with corn on the cob. The meat was juicy, the sauce was rich, and it’s definitely a recipe I’ll make again.
5. Turkey chili
To use up ground turkey from the freezer, I made a hearty turkey chili. I sautéed red pepper and garlic, added the turkey, spices, crushed tomatoes, chicken broth, corn, kidney beans, and black beans, then simmered it all together.
Topped with chips, cheese, sour cream, and jalapeños, it made a big batch and stretched just one pound of meat. I added a touch of brown sugar at the end, which gave it the perfect balance.
