The best way to cook the chickpeas is in the pressure cooker. Once the chickpeas are cooked you can use them in any of these easy meals with chickpeas.

1. Chickpea meatballs

The first chickpea recipe is for chickpea meatballs. All you need is chickpeas, marinara sauce, bread crumbs (you can also use oatmeal or gluten-free bread crumbs), and mustard. Add a cup of chickpeas, half a cup of bread crumbs, and mustard to taste, to a food processor.

Also, throw in your spices, salt, and garlic. You can add barbeque sauce or other spices if you prefer.

Blend that up, then add water slowly, one tablespoon at a time, until you get a sticky consistency. Once you have the right consistency, you should be able to form balls easily.

Then, you can cook the chickpea meatballs in the air fryer, on a stovetop, or in the oven at 425 degrees for 10-15 minutes. First, pour your sauce on top, and then cook away. These chickpea meatballs are delicious when served with pasta.

2. Sweet chili chickpea salad

This sweet chili chickpea salad recipe elevates a sandwich. For this chickpea recipe, add two cups of chickpeas, three tablespoons of mustard, salt, garlic, and two tablespoons of chili sauce to a food processor. You can also add tahini and lemon juice.

Blend it up, but leave it chunky. Then, add it to bread and lettuce for a chickpea salad sandwich.

3. Chickpea cookie dough

Did you know, chickpeas make a delicious dessert as well? This recipe for chickpea cookie dough is delicious and nutritious.

For this chickpea recipe add half a cup of chickpeas, three tablespoons of nut milk, a teaspoon of vanilla, and coconut and nut butter to taste to a food processor. Once it’s blended up, add some chocolate chips.
