5 Easy Family Dinners: A Week of Recipes

  • 4 slices cheddar or Monterey Jack cheese

  • 3 Tbsp cornstarch (or potato starch)
  • 1 Tbsp baking powder
  • 1 tsp each onion powder & garlic powder
  • ¼ tsp paprika
  • Salt
  • Olive oil spray


Sauce:

  • ½ cup honey
  • Zest and juice of 1 lemon
  • 1 Tbsp minced garlic
  • 1 Tbsp butter
  • 1 tsp black pepper
  • Salt

Pat chicken wings dry. Toss with cornstarch, baking powder, onion powder, garlic powder, paprika, and salt.

Lay wings on a parchment-lined baking sheet. Spray with olive oil. Bake at 425°F (220°C) for 40 minutes, flipping halfway through.

3. Taco meatloaf with seasoned rice

Ingredients:

  • 2 lbs ground beef
  • 1 cup crushed corn chips (like Fritos)
  • 2 large eggs
  • 1 ½ cups salsa (½ cup in the mix, 1 cup on top)
  • 1 packet taco seasoning
  • 1 cup shredded cheese (Mexican blend or Colby Jack)
  • Garlic powder, salt, pepper

Preheat oven to 350°F (175°C). Mix ground beef with crushed corn chips, eggs, salsa, taco seasoning, garlic powder, salt, and pepper.

  • A few dashes Worcestershire sauce
  • Onion powder, garlic, dried parsley

  • 5 bone-in pork chops
  • 1 can cream of mushroom soup (with roasted garlic, if available)

  • 3 Tbsp brown gravy mix
  • Onion powder, salt, pepper

  • 15 oz ricotta cheese
  • 5 oz cream cheese, softened
  • 2 eggs
  • ¾ cup Parmesan cheese
  • 2 cups mozzarella cheese, plus extra for topping
  • 1 Tbsp garlic (minced)
  • 1 jar pasta sauce
  • Parsley, basil, oregano, salt, pepper

    I love manicotti, but can't find a decent canned pasta sauce. Any suggestions?

      Peggy use a jar of marina sauce such as Bertolli, Del Grosso or Rao. You can actually use any tomato meat sauce too! I come from an Italian family and I’ve taken shotcuts all the time!
