8 Easy and Delicious Batch Cooked Breakfast Ideas

If you do not have a lot of time in the morning, but you still have to eat something, this is for you.


Today, I have eight amazing ideas for batch cook breakfast. With these recipes, you can set a day for meal prep and then forget about cooking in the morning for a whole month.


Let’s dive into these great breakfast freezer meals that will keep your entire family happy.

Brown your breakfast sausage in a skillet, then pour in beaten eggs, stirring frequently, and cook until both are done. Remove from heat and set aside.


For your cornbread mixture, use equal parts cornmeal and flour, a bit of sugar and a pinch of salt, two tablespoons of baking powder, two eggs, and approximately a cup of milk. Add more milk if needed for the consistency of a moderately easy to stir but not runny batter.

Add about a half cup of melted butter, fold in a can of creamed corn and the sausage and egg combo, a bit of green onions and cheese. Give things a good mix before spooning into a muffin pan.


Toss in a 400 F oven for about 30 minutes. Once the muffins are out, set them on a rack to cool, then store in a freezer safe bag for up to three months.

2. Pancake on a stick, or breakfast corn dogs

In a large skillet, cook sausage links until done. To make sure the links are fully cooked on the inside, steam them with a bit of water.


Afterwards, place them on a plate lined with paper towels or on a rack on top of a pan: that way, the grease that drains from the links will season your skillet for the next meal.

Insert bamboo skewers into the end of the cooked sausage links and then set them aside. You can get skewers at a craft store or online.

Use a premix or a box version to make the pancake butter. You only want to add enough of your wet ingredients to create a lumpy and very thick batter.

Stick your sausage skirts into the batter and evenly coat with the mix. Then place into a pan with moderately warm oil. These cook pretty fast so work with about three at a time. Cook until the batter is golden brown in color and then remove from the skillet to drain and cool.


Dip these in maple syrup for the best experience.

These are insanely marked up at the store, so instead whip these up in batches for a consistent crowd pleaser. They freeze wonderfully and reheat quickly.


3. Freezer oatmeal

Cook oats using your favorite method. Add some wheat germ or quinoa, vanilla, cinnamon, brown sugar and any dried fruit like raisins and chopped dates. Give things a good stir and place your oatmeal in a container that you can store in the fridge for an hour or two to firm up a bit.

After your oatmeal has cooled, portion your oatmeal into the muffin cups. You can add frozen fruit or berries and some nuts. Then place them in the freezer for a minimum of 4 hours up to overnight.


Use a silicone muffin tin to make it easier to remove the oatmeal afterwards. Once you do, place them in a freezer bag and store in your freezer.

When you have a frantic morning, pop some oatmeal cups into a wide mouth jar, close it with a lid, and grab a silicone jar jacket.


Once you are ready to eat, just add hot water, and toss in the microwave.

4. Green eggs and ham

Shred fresh spinach in a blender, or use frozen chopped spinach to save time.

Add your eggs and any health powders. Toss in some cheese and stir to combine. If you want to stretch it a bit, you can also add some milk.

Add in chopped bacon or ham and then pour into a muffin tin to bake in a 400 degree oven for about 20 minutes.

Spinach is an excellent choice for adding color, nutrients and mild flavor, but your picky eaters will not notice its taste behind the salty ham and cheese.


5. Eggs and hash browns

Brown several slices of bacon in a skillet.


You can use either frozen hash browns or make them yourself: shred potatoes, sprinkle with salt and pepper, and then stir to combine.

Add the hash browns to a muffin tin and then top with bacon and the fixings of your choice. I use green onions and cheese.


Finally, pour over the beaten egg mixture and place in the oven to bake.

Once they are ready, set them on a baking rack to cool. Store them in the freezer for up to four months.


6. Waffle egg muffins

Heat the oven and pop a greased aluminum muffin pan in.


Mix eggs, milk and Parmesan cheese. Season as you like.

Put mini waffles in the muffin tin, top with cheese and add some cooked canned sausage. Then add more cheese and the egg mixture.

These fun bite sized things taste like a complete breakfast meal in your mouth on the go. But if you do have time to eat these at home, pour maple syrup on top and truly soak up the flavor.

Start by making your pancakes. Keep them small.

Put the sandwiches in the freezer to set, using coffee liners.

Bake your squash in the oven until tender for about 40 minutes. Remove the seeds and fill your muffin pan with the squash.

    My "go-to" filling breakfast, low salt: olive-oil your skillet. Brown thinly-sliced new potatoes (or any, I guess) & onions...garlic if desired...fresh green sweet peppers or other if desired. Measure a whole petite fist-sized potato per person or equivalent ....and a quarter-sized medium onion per serving. Adjust as needed. When tender, slip onto a serving plate. In the same pan, cook eggs over easy for how many you will serve...one or two eggs per person. It only takes a minute or two...then, serve on the platter atop the potato mix. If you have it or have the few more minutes extra time, heat/fry small corn tortillas in the same frying pan until "stiff" & serve the potato mix topped w/soft "over easy" egg. A splash of Louisianna Hot sauce on the side recommended. It has salt, but so little in a "splash" as to be unremarkable...but adds a big 'bite." I've also found a totally NO SALT salsa from South Ameria that does the same thing taste-wise. I am on a low salt (1500 mg per day) diet & thought it would be impossible...but it's NOT. Most people eat upwards of 7,000 mg per day due to processed foods! I thought I was "watching" my salt b/c I didn't add any or much from a shaker during the day, but I found I was eating TONS in processed foods..even in bread!!! You must read labels. You must eat more fresh/homemade. This very filling breakfast or "brunch" for instance has only the salt inherent in all things organic....eggs, onions, garlic, olive oil, potatoes....foods from the Earth. Everything from the Earth has a basic salt content.....but NOTHING ADDED. I find that when I keep my morning meal as a very filling meal (like this one) with a low salt level (300 mg or less) the rest of my day is "easy" in keeping to a low salt level. I also use Kinder's NO SALT Lemon Pepper Seasoning on almost everything :) After a few weeks, it tasted like "salt" to me :)
