Six Lazy Weeknight Dinner Ideas
Hey besties! Life was busy this week, and your girl was not in the mood to be fancy. I kept dinners simple, real, and honestly... kinda lazy — but still super delicious. I’m going to share the meals we had with you to help if you're stuck in a menu block (yes, I made that up). Whether you're digging through your fridge wondering what to cook or just want new inspiration, I hope this gives you a few ideas!
Each meal uses normal ingredients, is family- and kid-friendly, and comes with a few shortcuts and customizations. Feel free to tweak anything to fit your crew and what you've got on hand.
Dinner 1: Chicken Caesar salad
We loved this dinner because it was light, refreshing, super customizable, and even the kids ate it!
Ingredients:
- Chicken breasts
- Romaine hearts
- Caesar dressing
- Croutons
- Parmesan cheese
Steps:
1. Bake the chicken
Season your chicken breasts with salt, pepper, or your favorite seasoning. Bake at 375°F for 25–30 minutes until fully cooked.
2. Prep the lettuce
Wash and soak the romaine hearts to get rid of any dirt or bugs. Dry thoroughly for the best crunch.
3. Assemble the salad
Slice the baked chicken. Toss the romaine with Caesar dressing, parmesan cheese, and croutons. Add the chicken on top.
4. Serve and enjoy
Plate it up and enjoy — even my picky eater cleaned their plate!
Dinner 2: BBQ chili cheese dogs with fries
We loved this because it was fast, fun, and totally customizable. It feels like a treat, but it’s easy-peasy!
Ingredients:
- Hot dogs
- Buns
- Your favorite BBQ sauce
- Canned chili
- Shredded cheese
- Frozen fries
Steps:
1. Bake the hot dogs
Place hot dogs in a greased baking dish and bake at 375°F for 10 minutes.
2. Add BBQ sauce
Drizzle with your favorite BBQ sauce if you like, and bake for 5 more minutes.
3. Assemble the dogs
Warm up canned or homemade chili. Place hot dogs in buns, then top each with chili and shredded cheese.
4. Melt & serve
Bake until the cheese is melted and bubbly. Serve with fries (frozen or homemade) and you’re done!
Dinner 3: Lemon pepper chicken legs with baked potatoes & green beans
We loved this classic and cozy dinner that was full of flavor!
Ingredients:
- Chicken drumsticks
- Lemon pepper glaze
- Green beans
- Parmesan
- Potatoes (Idaho + sweet)
Steps:
1. Roast the chicken
Season bone-in or boneless chicken, coat with a lemon pepper glaze, and bake at 400°F for 45 minutes.
2. Bake the potatoes
Poke holes in russet potatoes, rub with oil and salt, wrap in foil, and bake at 400°F for 1 hour (they can go in with the chicken!).
3. Roast the green beans
Toss green beans with oil, lemon juice, and minced garlic. Roast them like you would asparagus until tender, then sprinkle with Parmesan before serving.
4. Finish with extra glaze
Once the chicken is done, drizzle on a little more lemon glaze. It takes it over the top — so good.
Dinner 4: Shrimp alfredo with broccoli & spaghetti squash
This recipe was a sneaky way to add veggies, with a creamy homemade sauce.
Ingredients:
- Shrimp
- Onion
- Garlic
- Broccoli
- Parmesan
- Heavy cream + half & half
- Spaghetti squash
- Pasta (optional)
Steps:
1. Cook the shrimp
Sauté shrimp in butter, diced onion, and seafood seasoning until just pink. Set aside.
2. Make the Alfredo sauce
In the same pan, melt butter, stir in cream, shredded cheese, and seasonings. Simmer until thick and smooth.
3. Combine pasta & veggies
Add cooked spaghetti squash and a little cooked pasta to the sauce. Stir in steamed broccoli and the shrimp.
4. Toss & serve
Mix it all together until coated and heated through. Serve right away — creamy and delicious!
Dinner 5: Mini cheesy tacos with Mexican corn
These are fast, fun, crispy tacos that everyone loved — especially with queso for dipping.
Ingredients:
- Ground turkey or beef
- Refried beans (bagged)
- Taco seasoning
- Cheese
- Corn tortillas
- Canned corn
- Lime
- Mayo
- Spices
Steps:
1. Make the filling
Cook ground meat and stir in refried beans and taco seasoning. Heat through.
2. Cook the quesadillas
Spray a skillet. Add tortillas, sprinkle cheese + meat filling, fold in half, and cook both sides until golden and crisp.
3. Simmer the Mexi-corn
Boil frozen or canned corn with butter, lime juice, paprika, and mayo until it reduces and thickens slightly.
4. Plate it up
Serve quesadillas with queso dip and a generous scoop of that creamy, smoky corn.
Dinner 6: Southern breakfast night – Biscuits & sausage gravy
This meal was pure comfort. Everyone was happy. No leftovers!
Ingredients:
- Southern biscuit mix (or homemade)
- Sausage
- Flour
- Milk
- Salt & pepper
Steps:
1. Bake the biscuits
Use a baking mix or your go-to biscuit recipe. Bake according to instructions until golden.
2. Cook the sausage
Brown breakfast sausage in a skillet. Sprinkle in a bit of flour to soak up the fat.
3. Make the gravy
Slowly pour in milk, whisking as it thickens. Add salt, pepper, and optional red pepper flakes.
Split biscuits, pour over the sausage gravy, and dig in. Cozy and filling!
Life is unpredictable and exhausting sometimes, and that’s totally okay. These dinners may not be fancy, but they’re real. They fed my family, they were tasty, and they made life a little easier.
