2 Quick and Easy Tater Tot Casserole Recipes
If you have a big family, a tater tot casserole is an easy and filling dinner idea!
Today, I have two amazing tater tot casserole recipes to share with you. Both of them hide a lot of veggies in them, which works out great for picky eaters or little kids who do not like eating vegetables. Let’s get started!
1. Chicken tater tot casserole
Ingredients:
- 6 cups shredded carrots
- 3 cans cut green beans
- 2 10.5oz cans of cream of mushroom soup
- 1 8oz softened block of cream cheese
- 2 cups shredded cheese (Mexican blend or whatever kind you prefer)
- 1.5 lbs cubed and cooked chicken (could also use cooked Rotisserie chicken)
- 1 Tbsp Montreal chicken seasoning
- 1 tsp salt
- 1 tsp pepper
- 1 32oz bag Tater tots
Recipe:
1. Preheat the oven to 425°F. Peel and shred your carrots.
2. Put the shredded carrots in a 9x13 or larger pan, add the drained green beans in. This dish will not stick, so you do not have to worry about using a separate mixing bowl.
3. Add the cream of mushroom soup.
4. Soften the cream cheese in a microwave for a few seconds, or leave it outside in advance. Add the softened cream cheese, and one cup of shredded cheese. You are going to need the second one for topping this casserole.
5. Boil and drain your chicken, then add it to the pan and stir a bit.
6. Season with Montreal chicken seasoning, salt and pepper. Mix well.
7. Top the mixture with cheese evenly.
8. Line the whole pan with tater tots. You can either just dump them out and lay them evenly, or arrange them so they look uniform. I prefer uniform because it looks nicer and makes it easier to determine the size of each portion when I cut into it.
9. Bake at 425°F for 30 minutes, then switch to broil and broil on high for 2 minutes until the Tater tots are browned and crispy.
This creamy and cheesy tater tot casserole is full of vegetables, but because they are chopped up really small, it will trick even your pickiest eaters. This amount of ingredients makes for eight portions.
2. Meatloaf tater tot casserole
Ingredients:
- 1.5 lb ground beef (or ground Turkey)
- 1 32oz bag of Tater tots
- 1 cup quick cook oats (or steel cut)
- 1 12oz bag of pepper and onion mix (chopped small - about 2 and 3/4 cups)
- 2 cans sliced carrots (chopped finely - about 3 cups)
- 1 can diced tomatoes chopped small (1 cup)
- 1 cup ketchup
- 1 egg
- 1/4 cup Worcestershire sauce
- 1 tsp pepper
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
Recipe:
1. Preheat the oven to 400°F. Chop up the pepper and onion mix and the carrots.
2. Drain and chop diced tomatoes very finely.
3. Cook your quick oats. Those help to bulk up the meal and add a little more fiber into your dish as well.
4. In a large bowl, mix the ground meat with carrots, pepper and onion mix, tomatoes and quick oats.
5. Add in half the ketchup and save the other half for later.
6. Add the Worcestershire sauce, and season with salt, pepper, garlic powder and onion powder. Feel free to add other seasonings that you like. Add an egg and mix everything together.
7. Pour the mixture into a 9x13 casserole dish and spread it out evenly. A bigger pan would work, too, even though the layer would be thinner.
8. Spread the remaining ketchup evenly on top.
9. Line the tater tots over the ketchup. Same as the first casserole, you can either arrange them in an organized manner, or just dump them out.
10. Place in a 400°F oven for 35 minutes or until it reaches 160°F internally. Afterwards, bake on broil for about 2 additional minutes to get the tater tots crispy. Serve with extra ketchup.
This was just the right texture and so delicious, and it had a lot of veggies in it, which is always a win. This casserole will feed eight people.
