Philly cheesesteak tater tot casserole

3. Philly cheesesteak tater tot casserole

Number three on our list of the best ground beef recipes out there is Philly cheesesteak tater tot casserole.

To make this recipe, we are going to need a pound of ground beef, some green pepper, and some onion. We're also going to use tater tots and cheese as well.

So let's get our beef into the pan. We're going to brown this up, and then we're going to get chopping.

Once my meat has browned up, I drain that then add in the onion and green pepper.

I give that a good stir and let the veggies start to saute a little bit. And then we're going to add in the seasonings.

Of course, I'm going to be using some salt and pepper. I just did a good pinch of each.

Then, I'm going to be adding in some Worcestershire sauce. I did not measure anything; I just eyeballed it all.

Then, I'm going to give that a stir and add in some stone ground mustard.

I'm also going to be adding in this can of mushrooms that I've drained.

Next, I'm now going to be adding in a packet of brown gravy mix and one cup of water. I'm going to give this a stir once again and let this saute for just a few more minutes.

After that, I'm going to spray a 9 x 13 inch baking dish with some non-stick spray. Then, I'm going to pour my mixture right into the dish.

Don’t worry, it will thicken up as it cooks in the oven. I have the oven preheated to 350 degrees. Now we're going to assemble the topping for the casserole.

I'm going to take some of that cheese and put a layer of that on top. Then, we're going to add on our tater tots. I dump them right on top then cover with the rest with cheese.

Stick the baking dish in a 350 degree oven for about 30 minutes then let cool.

Beef stuffed eggplant

2. Beef stuffed eggplant

In the number two spot for our favorite quick ground beef recipes is a meal from Greece, beef stuffed eggplant. It has an amazing flavor. You need to check this one out.

Making beef stuffed eggplant

To make this recipe you need eggplant, tomatoes, red onions, lots of spices, Gruyere cheese, and about a half a pound of ground beef.

The first thing you do is roast the eggplant in the oven at 400 degrees Fahrenheit. I always wash the eggplant while the oven is preheating, cut the end off, slice it down the middle, then score the soft part of the eggplant without cutting the skin.

We're going to add about two tablespoons of extra virgin olive oil after that. Next, I add salt, pepper, and thyme. Then, roast it, cut side down.

We're going to put this in the 400 degree oven for about 40 minutes.

While that’s cooking, I prepare the ground beef mixture.

I'm going to be using half a pound of ground beef, diced red onion, a clove of garlic, a can of diced tomatoes, two tablespoons of dried thyme, a fourth a teaspoon of cinnamon, a fourth a teaspoon of ground cloves, salt and pepper, and a pinch of sugar.

I'm going to get the onions and garlic going on the stove first and start shredding up some Gruyere cheese.

Once my ground beef and onion mixture is all browned up, we're going to add in a can of diced tomatoes. Come up to a simmer and add some cheese.

By then, it’s been about 40 minutes. My eggplant is roasted. I'm going to let it cool for a minute then transfer them to a baking dish, flesh side up and skin side down.

We're going to push down on the flesh of the eggplant to make a well for the stuffing and fill it.

Put this back in the oven for 10 minutes until the cheese melts then serve it with a Greek salad.

Southwestern shepherd's pie

3. Southwestern shepherd's pie

In spot number one of ground beef recipes we love is southwestern shepherd's pie.

We're going to be using one pound of ground beef, eight ounces of sharp cheddar cheese, a can of diced green chilies, diced onion, and taco seasoning.

You can make your own mashed potatoes however you want to make them. I'm just doing this on the budget, so I've got this pack of instant mashed potatoes I’m making in the microwave.

Then, I've got about half a jar of salsa left that I'm going to be using up.

I'm going to start prepping all of my ingredients. Then, we will go over to the stove and drop the ground beef into my cast iron skillet.

Once it’s browned, I'm going to get those onions in there too.

All right, my meat and onions are done. I'm going to need to drain the grease.

Then, we will get this shepherd's pie assembled. Now that we have the grease drained, I'm going to add in my can of diced green chilies, a cup of salsa, and some taco seasoning.

I like cheddar so I add that to the top then I put on the mashed potatoes. The recipe says to bake it for 20 minutes at 375 degrees. When I take it out, I sprinkle more shredded cheese on top of the mashed potatoes.
