3 Cheap, Fast & Easy Summer Snack Recipes

If your summer is full of playdates with friends and family, you’ll want to read about these simple, quick, and easy summer snack recipes. I’ll share with you last-minute ideas that will satisfy adults and kids. I’m hosting a last-minute playdate with moms and kids, so let’s get started.

Cowboy caviar

For the most part, I’m using what I had.


Ingredients:

  • Italian dressing
  • 1 can of corn drained
  • 1 can of black-eyed peas, drained and rinsed
  • 1 can of Rotel (use fresh tomatoes as an alternative)
  • 1 can of black beans, drained and rinsed
  • 2 avocados, diced
  • 1 jar roasted sweet red peppers (use fresh peppers as an alternative)
  • Minced onions per your liking

1. Dump

This can’t get any easier, just put everything in a bowl and mix.

Add the diced avocado last so the chunks do not get all tamped down by the other ingredients.

Make sure the dressing coats everything well. I don’t measure so add in as much as you’d like because it will soak in.

4. Chill

Put in the fridge to chill for at least a couple of hours or overnight for best results. Serve it with tortilla chips.

Fill the tray with apple slices and toppings, then serve.

Toppings:

  • Chocolate chips
  • Crushed nuts
  • Crushed pretzels
  • White chocolate chips
  • Caramel sauce
  • Apples (Red Delicious and HoneyCrisp but use your favorite)


Other ideas for toppings:

  • Crushed Oreos
  • Peanut butter chips
  • M&Ms
  • Marshmallows
Rolling out the dough

Pizza bites or rollups

These are made just like you would make cinnamon rolls.


Ingredients:

  • Dough
  • Flour
  • Pizza sauce
  • Cheese
  • Toppings


1. Roll out the dough

On a floured surface, flatten the dough as much as possible using a rolling pin.

2. Add pizza sauce and toppings

Put some pizza sauce on the dough. Then add your toppings– I just used cheese.

3. Roll up the dough and slice

Roll it up and cut them into bite-sized pieces.

4. Bake

Put them in a pan or baking dish and bake until the dough is golden brown, at about 400 to 425 degrees for 18-25 minutes.

To finish off the goodies, I added grapes, cut-up watermelon, pretzels, and chips. The quick and easy feast was a huge success.
