5 Delicious Recipes to Warm Up Your Fall Days

Hey y’all! Who’s ready for some fall recipes? Fall is my absolute favorite time of year, and it’s the perfect time to be in the kitchen, cooking up all those cozy, comforting dishes. Today, I’m excited to share five amazing crock-pot recipes that will make your fall days extra delicious. Whether you’re looking for a hearty sandwich or a juicy chicken dinner, I’ve got you covered. Let’s get started!

1. Cowboy sandwiches

This recipe has been floating around the internet for years, and today, it’s finally time to try it out. These sandwiches are hearty, flavorful, and perfect for any fall gathering.


Ingredients:

  • 3 lbs beef chuck roast 
  • Lory’s Seasoned Salt
  • Onion powder 
  • 2 cups barbecue sauce 
  • ¼ cup brown sugar
  • 2 jalapeños (diced)
  • 1 big spoonful of minced garlic
  • 2 tbsp Worcestershire sauce
  • ½ package cooked bacon (reserve half for topping)
  • French’s Fried Onions
  • Kaiser buns
  • Sliced cheese (I used Monterey Jack)


Instructions:

Seasoning the meat

1. Season the roast

Start by seasoning the beef chuck roast with Lory’s seasoned salt and onion powder (or the onion flavor you prefer).

2. Assemble the ingredients

In your crock-pot, add the beef, barbecue sauce, brown sugar, garlic, Worcestershire sauce, jalapeños, and crumbled bacon. Stir everything together.

Cover with the lid and cook on low for 6-8 hours, depending on your crock-pot.

Once cooked and tender, shred the beef using two forks.

Lightly butter and toast the buns, then assemble your sandwich by adding a slice of cheese, the shredded beef, French’s fried onions, and a slice of crispy bacon.

Pair with your favorite side (I chose waffle fries and Caesar salad), and enjoy!


2. Crock-pot chicken legs

Next, we’re making crock-pot chicken legs. Trust me, these are the most tender and flavorful chicken legs you’ll ever taste, and they’re so easy to make!


Ingredients:

  • Chicken legs (enough to feed your family)
  • All-purpose flour
  • Sea salt and black pepper
  • Garlic powder, onion powder, paprika
  • McCormick Rotisserie Chicken Seasoning
  • Chicken broth (about 1/4 cup)
  • ½ stick butter


Instructions:

1. Prepare the chicken

Start by removing the skin from each chicken leg. Use a paper towel to help pull off the skin.

Layer the chicken legs in your crock-pot. Season them with salt, pepper, garlic powder, onion powder, paprika, and rotisserie chicken seasoning.

Pour chicken broth into the bottom and add slices of butter over the chicken.

Cook on high for 4 hours.

Serve with mashed potatoes (drizzle the drippings over them) and a side of broccoli. The chicken will be fall-off-the-bone tender!


3. Crock-pot meatloaf

Meatloaf is a classic comfort food, and making it in the crock-pot is a game-changer. You’ll love how juicy and tender it turns out!


Ingredients:

  • 2 lbs ground beef
  • ¾ cup Italian-style breadcrumbs
  • 1 tbsp dried parsley
  • ½ cup milk
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • Black pepper to taste
  • 1 tbsp Worcestershire sauce
  • ½ cup ketchup
  • 3 tbsp brown sugar
  • 2 tbsp balsamic vinegar


Instructions:

1. Prepare the meat

In a mixing bowl, combine ground beef, breadcrumbs, parsley, milk, eggs, garlic powder, salt, pepper, and Worcestershire sauce. Mix everything together with your hands.

Line your crock-pot with tin foil and spray with cooking spray. Shape the meat mixture into a loaf and place it in the crock-pot.

Mix ketchup, brown sugar, and balsamic vinegar. Drizzle half over the meatloaf.

Cover and cook on high for 3 hours (or low for 6).

Once done, drain any excess grease, then add the remaining glaze and cook for another 15-20 minutes.

4. Mississippi pork tenderloin

If you’ve ever had Mississippi pot roast, you’ve got to try it with pork tenderloin. It’s a budget-friendly, melt-in-your-mouth meal!


Ingredients:

  • 2.5 lbs pork tenderloin
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • 8-10 pepperoncini peppers
  • 1 stick of butter


Instructions:

1. Prepare the pork

Trim the silver skin off the pork tenderloin and place it in the crock-pot.

2. Add the seasonings

Sprinkle the ranch and au jus gravy mix over the pork. Add the pepperoncini peppers (and a splash of juice).

Add the stick of butter on top and cook on low for 6-8 hours.

Once the pork is tender, shred it with two forks.

Serve it over rice or in a sandwich on a bun. Either way, it’s delicious!


5. Angel chicken

Last but not least, we’re making angel chicken—a creamy, zesty chicken dish that’s easy to prepare and perfect for a cozy fall dinner.


Ingredients:

  • 2 chicken breasts
  • 1 packet zesty Italian dressing mix
  • 2 tbsp jarred minced garlic
  • ½ block cream cheese
  • ½ stick butter
  • 1 can cream of chicken soup
  • ¾ cup chicken broth
  • Angel hair pasta (about half a box)


Instructions:

1. Cook the chicken

Place the chicken breasts in your crock-pot. Sprinkle with the Italian dressing mix and garlic.

2. Add the sauce

Add the cream cheese, butter, and cream of chicken soup. Pour in the chicken broth to help get all the soup out of the can.

Cook on low for 3-4 hours.

Once cooked, remove the chicken, shred it, and return it to the sauce.

Cook the angel hair pasta, drain it, and stir it into the chicken mixture.

Top with parmesan cheese and serve with a side of air-fried Brussels sprouts and rolls.
