3 Delicious "Crocktober" Meal Ideas

October - or, as I like to say, “Crocktober.”


It’s time to take out the crockpots and have a nice warm meal waiting for you at night when it’s cold out. I made three delicious crockpot meals I want to share with you.


These meals are simple to prepare and will be piping hot, delicious, ready and waiting for you at the end of a busy day.

Chicken tacos

1. Chicken tacos

For the first meal, I decided to make chicken tacos. I put some chicken breast in the crockpot and added a can of diced tomatoes. I also put in black beans and corn. Then I poured in a can of enchilada sauce.

I added some seasonings like paprika, chili powder, salt, and pepper. I poured in a can of enchilada sauce and mixed the ingredients and covered the pot. I left it to cook on low for about 4-6 hours.

When it was done I mixed it up more to break apart the chicken. I served it on tortillas and sprinkled some cheese over the top. I also put some avocado slices on there.


This was a delicious, well balanced warm meal that really hit the spot at the end of a cold, fall day.

2. Chicken alfredo

For this meal, I made chicken alfredo pasta. I put some chicken breast in the crockpot.


I added a couple of spoons full of minced garlic. For seasoning I sprinkled in some paprika, Italian seasoning, oregano, garlic powder, salt, and pepper.

I poured in some heavy cream (about 2 cups, though I didn’t measure) as well as some chicken broth. Then I covered the pot to let it cook. I cooked it on low for about 4-6 hours.


When it was done cooking I used a masher to break up the chicken. I also threw in some shredded cheese. Parmesan would have fit the recipe better, but I didn’t have any and I like to use up whatever I have in the house.

Then I put in some fresh spinach leaves. I mixed everything, covered the pot again, and let it sit for 10-15 minutes.


Lastly, I added in some pasta and it was ready to eat. I served it with toasted bread with olive oil drizzled on top. This meal came out so good. Best of all, the only cooking I had to do was boil some pasta to eat with it.

3. Pot roast

I started this one by lining the bottom of the crockpot with large pieces of cut-up onion. Then I put in a 3-pound roast. I also added veggies. You can use whatever you want. I put in cut-up potatoes and carrots.

For seasoning, I threw in a packet of powdered gravy mix. Then I poured in a little more than a cup of water. I cut up half a stick of butter and put that in as well. I covered the pot and put it on low.

I left it to cook for about 10 hours. We love a hearty meat and potatoes dinner here. This was a delicious meal that the whole family enjoyed.

    I make the pot roast recipe from late Sept - March-ish & it’s SO good! My Alfredo and enchiladas are a little different so I’ve written these down and will be trying these fairly soon 😊
