5 Easy Dinner Ideas For a Quick & Delicious Meal

We all get busy and need easy dinner ideas to fall back on. I've got a few great recipes I use when our family needs a quick, delicious dinner. These are our family favorites that are easy to make dinners for any night of the week.


Chicken enchiladas

1. Chicken enchiladas

For the first meal, I'm gonna be making chicken enchiladas. You take plain chicken tenders and just season them with salt, pepper, and garlic powder. 


Next, add some olive oil to a frying pan, and then add your chicken tenders. 


In the same pan, Take three tablespoons of butter and melt it. Then add three tablespoons of flour and whisk together and cook for about one to two minutes to take the flour taste off. Then add two cups of chicken broth. 


We'll take a can of diced green chilies and add that to the broth mixture. 


Next, take one cup of sour cream and whisk that together. Then add about 1 cup of shredded taco cheese into the mixture and melt. 


Shred your chicken. Then add some salsa in and mix it up. Then spray your baking pan with some nonstick cooking spray. 


You will need some taco shells or tortilla shells. Arrange them in a baking pan.


Add some of the mixture to the bottom of the baking pan. 


Pour the rest of the sauce over the shells. Bake at 350 for about 25 minutes.


In the last 3 minutes, add the rest of the cheddar cheese and broil. I made some guacamole salad as a side dish.

2. Mississippi pot roast

Next up, I am going to be making a crock pot recipe for the first time. It's called Mississippi pot roast. You need a stick of butter, and you can just place the roast in the crock pot along with the stick of butter. Next, you're going to add an au jus seasoning packet along with a ranch seasoning packet.


I added half a cup of water because this is going to be on all day long since I'll be at work. Then I added pepperoncini and let it cook all day until it was tender. We made a side of sautéed mushrooms. It was very, very good.

3. Steak and potatoes

For our next easy dinner meal, we made a steak and potatoes. We just have some yellow potatoes, some steaks, some garlic, and seasonings. We're going to have green beans, mac, and cheese, and have a little bit of peppers and onions with the meal. 


Tonight my daughter decided to make dinner. She loves to cook. She is home from college right now, and she was super excited to start making meals and cooking at home to have a home-cooked meal. 


She likes to cook for an army, but that's okay. We have enough for leftovers. She's going to boil the potatoes for mashed potatoes.

 

Next, she'll season the steaks and will be cooking them in the air fryer. We just set the air fryer to the steak setting and let it go. It cooks them perfectly. They come out wonderful. 


She sautéed some peppers and onions, and mushrooms to the steaks.


She googled a steak butter sauce. Here she had melted some unsalted butter, added parsley, cayenne, and, I believe, a little bit of salt and pepper. 


Later she added some minced garlic. She spread the sauce on top of the steaks


She likes to make her mashed potatoes with evaporated milk and butter and hand mashes the potatoes.

4. BLT sandwiches with avocado

Tonight I needed a super easy dinner meal, so I decided to make BLTs with avocado. First, you toast the bread. I always use sourdough bread. That is the best bread, I think, for BLTs. Next, I made air fryer bacon.


Basically, what you do is put it in your air fryer at 390 degrees for 10 to 12 minutes. My daughter made the bacon earlier in the day, so I just warmed that up and sliced up an avocado. I also decided to make a side salad. I just put some veggies and pepperoncini in there. 


I assembled the sandwich, put a little bit of mayo on top, and you have a super simple, easy dinner idea.

So this night was the night of my oldest daughter's baccalaureate. After the baccalaureate, we went out to Longhorn Steakhouse. Me and my youngest split the prime rib meal. It was super good.
