Cheap and Easy Dinner Meal Idea for a Large, Hungry Family

Today, I’m going to show you how to make some cheesy enchiladas for only $.98 a serving. I’m also going to show you how to make a delicious lemon pound cake for only $.38 a serving.

Cheesy enchiladas

1. Enchiladas

I shopped at Walmart for my ingredients. Altogether I spent $13.70. The ingredients and prices are listed below:

  • 2 lb ground turkey $3.08
  • 1 onion $0.46
  • 1 can salsa $0.88
  • 2 10.5oz cans cream of chicken soup $1.36
  • 1 16oz container sour cream $1.96
  • 1 16oz bag shredded Mexican blend cheese $3.98
  • 1 pack of tortillas (at least 14) $1.98

I also used seasoned salt, red pepper flakes, onion powder, garlic powder, chili powder, and cumin.


I preheated my oven to 350 degrees.


Then I diced the onion and cooked my ground beef until it browned. While the beef was cooking I added in the onions and the can of salsa.

I added in one of the cans of cream of chicken soup and half of the shredded cheese. I dumped in the tub of sour cream and mixed the ingredients as they heated up and blended.


Then I added my seasonings. I put in a tablespoon of seasoned salt, a teaspoon of chili powder, a teaspoon of cumin, a teaspoon of garlic powder, and a teaspoon of onion powder. I also added a quarter teaspoon of red pepper flakes. You can add in more if you like.

Next, I sprayed down my pan so the enchiladas wouldn’t stick to the bottom. Then I lined the pan with my tortillas. I went ahead and filled each tortilla with about half a cup of the sauce.


I closed each of them and flipped them over so they would stay closed.

I had a bit of the sauce left over. I added the second can of cream of chicken soup to the leftover sauce. I mixed and heated the sauce and used that to cover the enchiladas.


I spread the sauce as evenly as I could to help the enchiladas come out nice and soft. Then I layered the rest of the shredded cheese on top.

I put the pan in the oven to let it cook for 25-30 minutes.


I knew it was done when it was bubbling and the cheese started to get that golden brown color. I like to serve this dish with some sour cream and guacamole.

2. Lemon pound cake

I spent $9.85 on ingredients for the Lemon Pound Cake. Here is what I bought:

  • 4 lemons $2.72 2 lb
  • flour $1.16 4lb
  • sugar $2.94
  • 1 8oz tub sour cream $1.16 6
  • eggs $1.87


I also had some ingredients at home that I used:

  • 1 cup of butter or margarine
  • Powdered sugar
  • Baking soda

I started by putting my softened margarine into a bowl. Then I added 3 cups of sugar, 1 teaspoon of baking soda, and 1 teaspoon of salt.


I grated the peel of the lemon and added some of that into the bowl. I juiced my lemons and added that as well.

I added my sour cream to the mixture. I also added 6 eggs. I used a hand blender to mix the ingredients. Then I added in 3 cups of flour and continued to blend the ingredients.

I sprayed down the bunt cake pan. I find that adding some flour to the bunt cake pan in addition to the butter spray helps prevent the cake from sticking to the pan.


After I sprayed the butter and added the flour, I poured in the batter.

I baked the cake for about 15 minutes in a 320-degree oven. While the cake cooled I started making a glaze. I added lemon juice and about a tablespoon of lemon zest to powdered sugar.

I poured the glaze over the cake and brushed it evenly over the entire cake. The finished product was delicious. This was a great, budget-friendly dessert.

    I like the sound of the enchilada recipe. I am keeping it and will be making it for my family soon. I am sorry that there are so many rude people in the world. If anyone has ever cooked e before they will have no problem making the recipes that you shared.
