4 Easy and Delicious Winter Soup Recipes

During these cold winter days, I decided it would be the perfect time to share some winter soup recipes. There’s nothing better than a hot bowl of soup on a cold day.


Use these recipes to keep your families warm and nourished.

Broccoli cheese soup

1. Broccoli cheese soup

Ingredients:

  • 24 oz broccoli florets
  • 1 onion, chopped
  • 32 oz chicken broth
  • 1 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1-2 cup shredded cheese
  • Bacon crumbles & sour cream for topping

Heat 2 tablespoons of olive oil and your diced onions in a pot and let them saute for a couple of minutes. Add your broccoli and 4 cups of chicken soup broth, salt, pepper, and milk.


Bring it to a boil and then turn down the flame and let everything simmer for about 10-20 minutes. You’ll want to cook it until the broccoli is tender.

Add 2 cups of shredded cheddar cheese. If you want to make the soup a bit thicker you can add a small amount of flour or cornstarch.


I served this soup with a dollop of sour cream and some cheese and bacon bits sprinkled on top. It was so creamy and delicious.

2. Cheeseburger chowder

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 5 potatoes, chopped
  • 3 carrots, chopped
  • 4 cups broth
  • 1 can crushed tomatoes
  • 1/4 cup ketchup
  • 1/4 cup mustard
  • 2 cups cheese, shredded
  • 1 cup milk
  • Salt & pepper to taste


Start by browning the ground beef & onions in a skillet.


I decided to use a crockpot for this one, so when the beef and onions were ready I transferred them to the crockpot.


Then I added the potatoes, carrots, broth, tomatoes, ketchup, and mustard.

I cooked everything on low for 6 hours. If you’re pressed for time, this can also be cooked on high for 3 hours. I added cheese and milk 30 minutes before serving and I seasoned it with salt and pepper to taste.


I served this soup with some sour cream and shredded cheese on top. This was my first time trying this recipe and it was so yummy. My family loved it.

3. Creamy tomato soup

Ingredients:

  • 1 can crushed tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1 tablespoon Italian seasoning or basil
  • Salt and pepper to taste


Sauté the onions in olive oil on a medium flame in a stock pot. Once the onions have been sauteing for a few minutes I added some fresh chopped garlic and let that sauté for another 3 or 4 minutes.


Then I added my tomatoes, broth, sugar, and seasonings.

I let everything simmer for 20 minutes. Then I stirred in the heavy cream and a cup of regular milk, and allowed it to heat through. I served it with a couple of pieces of cheese toast and it went perfectly together.

4. Enchilada chicken stew

Ingredients:

  • 1-2 pounds shredded chicken
  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 1/3 cup green chili sauce
  • 1 can crushed tomatoes
  • 4 oz tomato paste
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 2 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


I decided to sauté the vegetables a bit before I put them in the crockpot. While the vegetables were sauteing I poured a 6-ounce can of tomato paste and 1 large can of crushed tomatoes in the crockpot.


I mixed those, added my seasonings, and mixed everything again.

Next, I added my chicken and my vegetables. I put the lid on the crock pot and cooked it on high for about 4 hours.


It can also be cooked on low for 8 hours. I served the soup in a bowl over some tortilla chips. I also put some sour cream and fresh cilantro on top.

    Good morning! It is pouring rain in La Verne , California and all of these recipes for soup look perfect! ... Thank you for sharing. I am going to give them a try. I am thinking that the crockpot would be the easier way for me. I am 82 yrs old and hoping that I can freeze and use small portions at a time.

      I'm praying all goes well for u to weather the storm. I cheat a bit I buy a quality box soup like Pacific, ect then add to it. Like the carrot OR butternut creamed soups. I then cook up carrots or butternut to add to it along wit milk of choice > Box ed , whole, oat, canned plus water to stretch the box soup to 4 + cups
