2 Easy Meal Prep Recipes: Delicious Taco Bowl & Creamy Dip

Let's set ourselves up for success this week with these meal prep recipes. This is something I'm already doing, but I thought I would share it with you because it helps me and my kids out. We are all trying to live healthier, but we are super busy with school. Meal prepping helps us stay on track.


I am sharing these meal preps because I do this on Sundays. It sets me up for success. I feel like I've started the week. I've got things for lunch, and even sometimes, if we're so busy that I don't have time to come home and cook dinner, we can grab one of the meal preps out of the fridge.


I've already got one meal prepped on a sheet pan, and it's the same meal I shared last week. It says to cook steak and veggies in a stir-fry sheet pan meal. I went ahead and made that because it's going to be a busy week at school. I'm going to go ahead and share two more recipes with you.


I will share a taco bowl with you that I will make using ground turkey. I've got the ground turkey thawing out. I also have most of an onion. I have two green peppers that I'm going to use and some taco seasoning. I always have cheese in the fridge.


I'm going to brown up the turkey meat with the taco seasoning, peppers, and onions.


That's going to go in a bowl. You can eat that however you want. You can put that with rice. I'm not doing that this week. I have zero-carb tortillas. I've been getting these for a little while now. We love them.


I'm also going to be making a buffalo chicken dip, but it's not your average buffalo chicken dip. I got this idea from my daughter.


I will try to recreate it, but it is a healthier option for a buffalo chicken dip. You can eat that with the tortillas, but we're eating it with celery this week.

1. Taco bowl recipe

The first thing I will do is get the taco meat going because that will take longer.


I'm going to go ahead and get my ground turkey going on the stove.

While the ground turkey is browning, I will chop my peppers and onions so we can get that out of the way.

When the turkey has browned, add taco seasoning.

Stir well. Divide the meat into your containers.


Sauté your peppers and onions using the same frying pan until they are tender.

Divide the veggies evenly on top of the turkey meat in each container.


Seal and refrigerate or freeze for dinner later in the week. After heating, serve in a bowl or with the tortillas.


2. Buffalo chicken dip recipe

The first thing we will do to make this buffalo chicken dip is drain a can of chicken breast into a bowl.

Then we will make sure to break that meat up with a fork.

Next, we're going to be adding in 1 cup of the cottage cheese, and we're going to get that mixed into the chicken.


After that, we will add just a little bit of ranch dressing. We are using the Bolthouse Yogurt Ranch here.

Then we'll add in some Texas Pete hot sauce. You can add whatever hot sauce you like.

Next, we will divide this buffalo chicken dip into individual portions.


So, we put what we made here today in three different containers. We will put these in oven-safe containers because we will be topping them with cheese and baking them in the oven.

Once we have everything topped with cheese, we're going to bake this just until the cheese on top melts, and this is going to be an ooey, gooey, yummy, delicious lunch for the week.
