How to Make Simple & Tasty Aldi Meals on a Budget of $10

I’ll show you the best Aldi meals on a budget. I went on a shopping trip to Aldi and picked up everything I needed on a pre-tax budget of $10. Here’s what I chose to buy, but it totaled $9.15 so I came in under budget:

Ingredients for the stuffed peppers

Ingredients

  • 1 pound ground turkey
  • Tomato sauce
  • Beef flavored rice
  • Roasted garlic mashed potatoes
  • Block of cheddar cheese
  • Pack of three green peppers

I’m going to make stuffed peppers and it’s a recipe I made up but it’s based on the classic stuffed pepper recipe. For the side, I’ll make a side of mashed potatoes. Easy-peasy.

I’ll get five meals out of this by cutting the larger green pepper in half. And one of my kids doesn’t want the pepper, only the filling. Here are the steps:

Cleaning and softening the peppers

1. Clean and soften peppers

I like my peppers a little softer. If you do, too, cut them up, scoop out the seeds, wash them out, and boil them for a few minutes.

Cooking the ground turkey

2. Cook the ground turkey

While the peppers are boiling, cook the ground turkey.

Cooking the rice

3. Cook the rice

Make the box of rice per the instructions. So all three things are cooking at once.

Prepping the cheese

4. Prep the cheese

Grate half of the block of cheese and add it to the cooked turkey. Add the can of tomato sauce to the turkey and cheese mixture and combine. This is the filling for the peppers. Season it as you go along.

Adding rice to the mixture

5. Add the rice

When the rice is cooked, add all of it to the turkey mixture.

Filling the peppers

6. Fill the peppers

Drain the peppers and put them into a baking dish to be filled. Overfill the peppers with the mixture.

Adding cheese to the peppers

7. Add more cheese

Grate cheese over the top of the stuffed peppers. Cook in the oven at 350 degrees Fahrenheit for about 15 to 20 minutes until the cheese is bubbly. As the peppers baked, make the instant potatoes per the bag’s instructions.

8. Plate them up

Let the extra filling spill out of the pepper to make a bed on the dish, it’s okay and helps the pepper stand up on the plate.

This recipe made five dinners for my family. This is one of the best cheap meals from Aldi that we’ve had! But next time I cook this I would add about a tablespoon of chili powder in the mixture to make the flavor pop.
