Delicious Recipes to Empty Your Freezer & Bonus Ideas

It’s time to empty my freezers. I decided to clean out my deep freezers and pull out some items from my everyday freezer to make some recipes.


I pulled out tomatoes from the summer garden, beef bones, and veggie scraps.


So I’m going to use these things to make some spaghetti sauces and some beef broth. (And, there’s a bonus recipe at the end!)

1. Beef broth

I roasted six beef bones. I preheated my oven to 400 degrees Fahrenheit. I drizzled some olive oil over them, seasoned them with salt and pepper, and then popped them in the oven for about 30 minutes.

I went ahead and grabbed some veggie scraps and peels I had in my fridge and freezer that needed to be used up like onions and celery. I do not buy extra veggies for this recipe–I keep scraps in freezer bags.


I just dumped all of what I already had into my roaster pan. For seasoning, I added bay leaves, oregano, minced garlic, and garlic powder – it really depends on what you have on hand. I salt it right before I can it.

I added a couple of bowls of water into the roasting pan to cover the scraps.


I added the roasted beef bones into the roasting pan. I cooked all this at 225 degrees Fahrenheit all night long. The house smelled amazing!

The next day the color of this beef broth is a rich, beautiful red color.

I scooped out the scraps, seasoned the broth with salt and pepper, and then processed the cans in my canner.

I’m not a canning teacher so I won’t go into details here. It’s best to research the correct canning procedures for your location.

Here I just wiped the rims with some vinegar, covered them, and popped on the lids to process.

2. Spaghetti sauce

I also let my tomatoes cook down all night long in my crockpot. I dumped everything into the pot and added in blocks of frozen tomato juice and ¾ of a bag of pepper and onion blend.

The crockpot lid didn’t fit but it’ll all cook down so I’m actually putting it on loosely.

The next day, I blended the tomatoes in the crockpot with an immersion blender. I turned the crockpot from low to high so the whole sauce could start thickening up.

I ran all the sauce from the crockpot through a food mill just to get bits, seeds, and skin out. You can also dehydrate the tomato pulp that is in the food mill to use as tomato powder.

I put the sauce back into a stock pot and added simple seasonings to taste such as Italian seasoning, garlic and onion powder, brown sugar, and salt and pepper. Then I simmered it down for about 30 minutes on the stove.

After simmering, I let it cool down a bit and put the sauce into my cans.

3. Bonus: Homemade vanilla

While I did all of this, I made vanilla! I got two bottles, 10 beans, and a bottle of bourbon whiskey. Five beans go in each bottle.

Cut the beans down the center to expose the vanilla. Cut them in half to fit in the bottles.

Top it with the bourbon whiskey. Label the jars and let them sit in a dark place for about six months. There are quicker recipes but I like this one. I’ll shake the bottles every once in a while.
