Three Quick and Cozy Casserole Recipes

Winter weather calls for some cozy casseroles. I’ll share three super easy and delicious winter casserole recipes to get you through the season. They will warm you up from the first bite!

Spinach artichoke chicken casserole

Recipe 1: Spinach artichoke chicken casserole


Ingredients:

  • 4 cups chicken, diced or rotisserie chicken
  • 1 8-ounce package of cream cheese
  • 1 ½ cups cottage cheese (or use ¼ cup mayonnaise and ⅔ cup sour cream)
  • ½ cup heavy cream
  • 1 14-ounce can of plain artichokes, drained
  • 1 cup parmesan cheese
  • 1 bag or box of spinach, fresh or frozen
  • 1 to 2 cups of mozzarella cheese
  • Garlic, minced
  • Salt, pepper


Directions:

Season and cook the chicken on the stovetop.

Add room-temperature/softened cream cheese, cottage cheese, and heavy cream to a mixing bowl.

Add garlic, salt, and pepper to taste. Mix the ingredients.

Add in the drained can of artichokes and parmesan cheese.


Add in the spinach and cooked chicken and mix.

Add the mixture to a baking dish, top with mozzarella cheese, and bake at 375 degrees Fahrenheit for 20 minutes.

Recipe 2: Chicken broccoli top casserole


Ingredients:

  • 1 pound cooked chicken breast, diced
  • 1 bag frozen broccoli
  • 1 can cheddar cheese soup
  • 1 cup sour cream
  • ½ cup bacon, cooked and diced
  • 1 ½ cup cheddar cheese
  • 1 package tater tot rounds
  • Salt, pepper
  • Garlic powder


Directions:

Put the bag of defrosted broccoli in a bowl and cut it up into bite-sized pieces.

Season and cook the chicken on the stovetop and add cooked chicken to a mixing bowl.

Add a can of cheddar cheese soup to the bowl.

Add sour cream and cooked diced bacon to the bowl.

Season with salt and pepper. Mix and add to a greased casserole dish.

Top with cheddar cheese and tater tots, then season to taste. Bake at 375 degrees Fahrenheit for 30 minutes.

Recipe 3: Ground beef Philly


Ingredients:

  • 1 and ½ pounds of ground beef
  • 1 to 2 tablespoons of minced garlic
  • 1 bag of frozen peppers and onions
  • 1 8-ounce package of cream cheese
  • 8 slices or so of provolone cheese
  • Onion powder
  • Garlic powder
  • Paprika
  • Salt and pepper

Cook ground beef until brown, season to taste with salt, and pepper, and add minced garlic.

Add peppers and onions to the pan.

Add cream cheese in blocks (to make it easier to melt).

Season with onion powder, garlic powder, and paprika and saute on the stove until creamy.

Transfer to a baking dish (I used my oven-safe pan above). Top with provolone cheese. Bake at 350 degrees Fahrenheit for about 15 minutes.

Serve this on rolls, chips, or even over rice. Or, eat it as is.


I will be honest with you – we did not love this recipe. I am going to change it up a bit by adding in other ingredients rather than just the cream cheese and hope that helps make this recipe better. But, you may love it as is!
