Three Quick and Cozy Casserole Recipes
Winter weather calls for some cozy casseroles. I’ll share three super easy and delicious winter casserole recipes to get you through the season. They will warm you up from the first bite!
Recipe 1: Spinach artichoke chicken casserole
Ingredients:
- 4 cups chicken, diced or rotisserie chicken
- 1 8-ounce package of cream cheese
- 1 ½ cups cottage cheese (or use ¼ cup mayonnaise and ⅔ cup sour cream)
- ½ cup heavy cream
- 1 14-ounce can of plain artichokes, drained
- 1 cup parmesan cheese
- 1 bag or box of spinach, fresh or frozen
- 1 to 2 cups of mozzarella cheese
- Garlic, minced
- Salt, pepper
Directions:
Season and cook the chicken on the stovetop.
Recipe 2: Chicken broccoli top casserole
Ingredients:
- 1 pound cooked chicken breast, diced
- 1 bag frozen broccoli
- 1 can cheddar cheese soup
- 1 cup sour cream
- ½ cup bacon, cooked and diced
- 1 ½ cup cheddar cheese
- 1 package tater tot rounds
- Salt, pepper
- Garlic powder
Directions:
Recipe 3: Ground beef Philly
Ingredients:
- 1 and ½ pounds of ground beef
- 1 to 2 tablespoons of minced garlic
- 1 bag of frozen peppers and onions
- 1 8-ounce package of cream cheese
- 8 slices or so of provolone cheese
- Onion powder
- Garlic powder
- Paprika
- Salt and pepper
Directions:
Serve this on rolls, chips, or even over rice. Or, eat it as is.
I will be honest with you – we did not love this recipe. I am going to change it up a bit by adding in other ingredients rather than just the cream cheese and hope that helps make this recipe better. But, you may love it as is!
