3 Quick and Easy Chicken Freezer Meal Ideas

It will be super busy this fall, so let's prepare some chicken freezer meals. What I like to do is I like to go ahead and prepare some meals and have them in the freezer for those busy fall nights.


I want to get my freezer full, so all I have to do is take these meals and dump them in the crock pot, and I don't have to spend a lot of time in the kitchen cooking.

Ingredients

I just returned from the store, so I'll show you what we've got. Then, I will show you how to put them in your freezer bags to be ready when you need them most.


Many of these items you might have stuck back in your pantry or your freezer, so you may not have to buy all of them.


We've got all these canned items: frozen veggies, two bags of frozen chicken, and I have a massive onion. This is all pretty much dump-and-go. The only chopping I'm going to have to do is this onion.

You'll need some freezer bags and a Sharpie marker for labeling.


Then I have one of these little gadgets that clips your bags.

I also use a pitcher.


So, let's get started with our first freezer meal.


Our only prep work is to chop up this onion. This is going to go in four meals. I have all that onion chopped. I will put it in this measuring cup to get it out of the way, and then we will be ready to throw our dump-and-go freezer meals into their bags.


1. Cheesy broccoli and chicken casserole

We will put today's date and that it's cheesy chicken and broccoli. I will be doubling each of these recipes, So we'll go ahead and label the next bag. You can take a big pitcher, and I will put my bag in it so it's easy to feel. Let's get started with our cheesy chicken and broccoli.


The first thing that you're going to need is some chicken. Each bag of chicken is going to make three meals. I will put two chicken breasts in each bag now for each one. We're going to put in one bag of Chopped broccoli. This is a 16-ounce bag.


Next, we will put about a cup of onions in each bag.

The last thing we will be putting in is a can of cream of mushroom and a can of cheddar cheese soup into each bag.


If you don't like cream of mushroom, you could use cream of chicken.


We will take our freezer mixture, and I will try to get as much air out of it as possible.

Because I doubled the recipe, I now have two chicken freezer meals ready.


When I'm ready to make it, I would just put it in my crockpot in the morning that I want this for dinner and let it cook on low all day. You'll season with salt and pepper on the day you're cooking. Season to taste. I will probably serve this over some pasta or maybe with a side salad or something like that.


2. Chicken and gravy

The next meal that we're going to be making is chicken and gravy. We are going to be adding chicken stock the day that we cook. You'll need four cups of chicken broth.

We're also going to need two chicken breasts.


Always remember to wash your hands in between. We will put a can of cream of chicken into the freezer bag for each chicken breast.

Next, we will add two chicken gravy packets to each bag.


That is it for this one. Super simple. You really want to ensure you get all that air out of there.

Put this in the crock pot on the cooking day, and add your chicken broth.


You got two more meals now with the chicken and gravy.


Put this in your slow cooker. Slow cook it all day on low for seven to eight hours or four to five on high, and then I will serve this with a side of maybe steamable green beans and some mashed potatoes.


3. Chicken enchilada soup

This one has many more ingredients, but I'm excited about it. You will add four cups of chicken broth on the day of cooking. We will start by adding our chicken breast to each freezer bag.


We will take what's left of our onion, and I will put half in each bag. Now we need some garlic.

I'm just going to use this minced garlic because I always have that on hand, and I'm not even going to measure. I'm just going to put some in there that's the equivalent of two cloves for each bag.

You're going to need two cans of drained, rinsed black beans.


Next, we're going to be putting in a can of fire-roasted diced tomatoes, and a can of tomato sauce.

After that, we will put half a bag of frozen corn into each bag.


Next, the recipe calls for chipotle peppers in adobo sauce. It calls for three tablespoons. This is going to add some heat.


So if you don't want it to be too hot, you might want to skip this. But I'm just going to take three of these peppers and drop those peppers in there with one little spoonful of liquid, and that is it for this chicken enchilada soup.


Let's get all of the air out.

So there we go to chicken enchilada soups, ready to go in the freezer.


On the day of cooking, You're going to add four cups of chicken broth, put it in a slow cooker, and let it cook all day on low for seven to eight hours or high for four to five hours. You could have sour cream on top or cheese and serve it with some tortilla chips.


I'm going to season with salt and pepper to taste, and I'm going to add some cumin. You can add in a taco packet if you want that kind of flavor as well.

I now have six chicken freezer meals from three recipes ready to go in the freezer and ready to make my life simpler when life gets crazy. These six meals will simplify my life in the coming week.
