Today, I’m going to share my top 3 quick and easy chicken recipes. Chicken is a great basis for family meals. It provides lots of protein and can be prepared in so many ways.

The recipes I’m sharing here are my family’s absolute favorites.

Chicken alfredo French bread pizza

1. Chicken alfredo French bread pizza recipe

For this recipe, we will use half a rotisserie chicken, two loaves of French bread, alfredo sauce, and shredded mozzarella cheese.

I cut up half of my chicken and saved the other half for the next meal.

I took my two French breads, sliced them down the middle, and then cut them in half.

This will allow me to make 8 French bread pizzas.

I spread alfredo sauce on each piece of bread.

If you want to make your own alfredo sauce, that would be great and would save you money, but I just used a ready-made sauce to make things easier for myself.

Then I added my chicken on top and sprinkled my mozzarella cheese on top of that.

I put my pizzas in a 450-degree oven for about 20 minutes, mostly just to melt the mozzarella. I sprinkled some parsley flakes on top to add a pop of color.

This was so delicious, and we even had enough leftovers to eat for lunch the next day.

2. Chicken bacon ranch casserole

For this chicken casserole recipe, I used some onion, leftover bacon bits, shredded cheddar cheese, sour cream, and egg noodles.

I also used chicken, evaporated milk, ranch seasoning, and a block of cream cheese.

I put my egg noodles in some boiling water and diced up my onion. I sauteed my onion in a pan with some butter.

I cut up my chicken, put it in a large mixing bowl, and used my hands to break it up a bit more. Then I added about 1 cup of sour cream.

I cubed my block of cream cheese and added that to the bowl. I added most of my bacon, saving a little bit for the topping, and did the same with my cheddar cheese.

I poured in half a can of evaporated milk and mixed everything.

I added in the sauteed onion, as well as a tablespoon of ranch seasoning.

I mixed everything and then added the noodles once they were cooked and strained. I stirred the noodles until they were well combined.

I sprayed my casserole dish with some non-stick spray and then poured everything into the dish.

I sprinkled an even layer of bacon bits and shredded cheese on top.

I also sprinkled some French fried onions over the top as well and put the dish in my preheated 350-degree oven. I left it to heat for about 20 minutes.

It didn’t need that much time because the chicken and pasta were already cooked.

Butter chicken

3. Butter chicken recipe

For this recipe, I used a stick of butter, salt, pepper, minced garlic, paprika, chili powder, ground cinnamon, turmeric, and cumin.

I cubed my chicken breasts into one-inch pieces. I put the chicken in a container and added ½ a teaspoon of pepper, and 1 teaspoon of each of my spices.

I put the lid on the container and gave it a good shake to mix everything. Then it was time to add in the rest of my ingredients.

I put in half a cup of plain Greek yogurt. I mixed it up, put the lid back on, and let it marinate in the fridge for 30 minutes.

While waiting for the chicken to marinate I cooked up some basmati rice. I also diced an onion and grated some fresh ginger.

I took 2 tablespoons of butter and put it in a pan with the diced onion and put it on the stove to cook until the onions were translucent.

Once the onions were translucent, I added 1 teaspoon of garam masala and gave that a stir before adding in the chicken.

I let the chicken heat up for about 5-7 minutes before adding the sauce. While that was heating, I added 1 tablespoon of minced garlic and the grated ginger.

Then I added an 8-ounce can of tomato sauce and a cup of water. If you have chicken broth you can use that instead of the water. I let everything come to a simmer and covered the pan leaving it to cook for about 5 minutes.

Next, I poured in 1 cup of heavy cream, gave it a stir, and covered it to let it sit and heat for an additional 5 minutes.

After 5 minutes I put in another 2 tablespoons of butter and let that melt. Then it was ready to serve.
