2 Easy Recipes: Chicken Fajita & Spaghetti Meatballs Meal Prep Ideas

I really believe in meal prepping or batch cooking as a way to set yourself up for success in the week.


Whenever you are tired and do not feel like cooking, instead of running to the drive-thru or picking up a pizza, you are going to have a nutritious homemade meal right there waiting for you.


Today, I want to share a wonderful chicken fajita meal prep recipe, as well as a variation on spaghetti and meatballs. Let’s get started!

Chicken fajita meal prep ingredients

For this chicken fajita sheet pan, you are going to need some chicken tenderloins, onions, and peppers, as well as some tortillas and cheese to serve it with. Preheat your oven to 425 degrees.


Dice up your onion into half rings, and your peppers into thin sticks halved. Get the veggies onto a sheet pan, sprayed with oil, and spread them around.


Now that our veggies are prepped, let’s get going with the chicken. Cut it up into bite sized pieces, to make it easier to heat these meal prep fajitas up at work or eat them on the go. Then add the chicken onto the sheet pan as well.


Drizzle some oil over the chicken and the veggies, and season with salt, pepper, garlic powder, cumin, and some chili powder. Alternatively, you could use a fajita seasoning packet or taco seasoning.


Once you have finished seasoning, give this a toss and bake in the oven for 25 minutes.

Here are those delicious chicken fajitas out of the oven. This is going to make about four portions, and I am going to serve with zero carb tortillas, but you could use any other kind of tortillas as well.

Spaghetti and meatballs meal prep ingredients

For the spaghetti and meatballs, I have found meatballs on sale, and I am going to be using some hearts of palm pasta.


It is very low calorie, just 20 calories and 4 grams of carbohydrates per serving, and all you have to do is open the pack, rinse it off, and heat it up with whatever it is that you are using this for. I am also going to be using pasta sauce.


Rinse off the pasta and get your meatballs browning in a pot. Once they have browned, add in that pasta sauce and some water.


I always pour the water into the pasta jar, shake it up and add it to the pot to make the most of that sauce. Give it all a stir.

Spaghetti and meatballs meal prep

Rinse the hearts of palm pasta and add that to the sauce and the meatballs. Give it a final stir, and there you have it. It will make four portions as well that you can enjoy throughout the week.
