4 Cheap Summer Recipes That Take Less Than 15 Minutes

We are cooking some delicious cheap summer recipes in 15 minutes or less. One of my goals for this summer is to keep it quick and easy.


This summer, I want to be outside. I want to be doing things. I don't have a lot of time to spend cooking elaborate, fancy meals for my family. So I've got some quick and easy summer recipes for you today.


How to make quesadillas

1. Quesadillas 

Quesadillas make the perfect quick and easy meal, especially if you buy a rotisserie chicken from your local grocery store. That's going to help you save a lot of time putting this meal together.


I'm going to pair that with a couple of other ingredients that I have on hand, and we are going to make some delicious chicken bacon ranch quesadillas with cheese. You change the recipe up and use what you have on hand.


I'm going to add on some cheddar cheese here, and then we are also going to add on some bacon. We're going to add some ranch and, of course, some of that rotisserie chicken. 


Next, we are going to close these up and get them nice and toasty and heated through. It took only a few minutes to put these delicious chicken bacon ranch quesadillas together.

I served mine with avocado on the side with a little bit of salt and pepper, but you can serve it with whatever you like or whatever your family likes.

2. Turkey pesto sandwich 

I love a good bologna, Doritos, and cheese sandwich, but sometimes you want to change it up and eat something delicious and refreshing. I have got some of my homemade bread that I have cut and toasted.


Now I'm going to add a decent layer of pesto onto one side, and then we are going to add on some mozzarella cheese slices. You can use provolone as well. I'm going to use some cold-cut turkey, and then we're going to add on some spinach and some avocado. 


You can add tomatoes. You add whatever veggies you like and want on your sandwich. This took five minutes to put together, and it was delicious.


Something so simple as a sandwich, just changing it up like this, adding different ingredients, and adding that pesto, can be something new and refreshing to feed your family.

I served it with some chips that I had in the pantry, and it was delicious.

3. Smoked sausage and broccoli in garlic butter

This meal was delicious, budget-friendly, and so quick and easy. I've got my smoked sausage cut up there. I'm going to add it to my pan with a couple of tablespoons of butter, and we will just get some color on both sides of that.


One of my tips for quick and easy meals is to use already-cooked proteins. Get the rotisserie chickens. Buy the smoked sausage or lunch meat.


Once your sausage has some color on it, we're going to take and remove it from the pan and put it on a paper towel-lined plate. 


To that butter that is already in your pan, we're going to add some garlic. I did not measure. We love garlic around here, so we're going to add a lot. Turn your heat down a little bit because you don't want to burn the garlic. You just want to get it nice and toasty and flavorful. Keep it moving so it doesn't burn.


Saving me some cooking time, I went ahead and microwaved my broccoli, drained off any of the liquid, and we're going to go ahead and get that added into our pan. 


Then we're going to add a little squirt of some lemon juice, and then we're going to add our sausage in there, give everything a good toss and give it another season if you think it needs more of anything. 


Of course, you always want to season in layers. You want your food to taste good, but that is it. Once everything is coated and the sausage is added back in, that is it.

I'm sure you could serve it with rice if you needed to stretch this and make it a little bulkier, but we just ate it as the broccoli and sausage, and it was so good.

4. Hot ham and cheese sandwiches

I decided to make some waffle fries as a side dish, which is going to take the longest for this meal. So even with cooking frozen French fries, you can still do this in 15 minutes easily.


I chose to make my own homemade rolls for these. I don't know what it is about making any kind of sandwich or burger or anything on homemade bread, but it is so much better. 


I'm going to put my bottom bun down. I'm going to do Swiss cheese on the bottom, and then we're going to add on our ham. Next, I'm going to place Muenster cheese on top. I like that combination of cheeses.


Lastly, we're going to put our top buns on top. I like to make a little melted butter with garlic powder, onion powder, and parsley. Pour that all over the top, making them delicious and buttery, and seasoned.


You can also do a sprinkle of sesame seeds and poppy seeds, if you want to, on top as well. We're just going to put these in the oven at 350 for about ten minutes.
