Springtime is coming, and that means a lot of busy evenings where we need to get supper on the table super quick and very easily. This is what I am here for today.


I want to share four super simple meals with rotisserie chicken. I get mine from Costco for just $4.99, which is a great bargain, and it is truly a universal ingredient that makes for a delicious but easy to make dinner.


So let’s get started with these rotisserie chicken meal ideas!

1. To prepare homemade cream of chicken soup, whisk together 1 cup of water or milk and 1/3-1/2 cup of flour and heat it over the stove for a few minutes.


2. Mix two bags of frozen hash browns and one shredded chicken breast from a rotisserie chicken, or around 1-1 ½ cups.


3. Add in your cream of chicken soup. If you are using store bought, you will need approximately two cups.


4. Add one cup of sour cream, half a cup or a stick of melted butter and one pound of shredded cheddar cheese. Stir all of this together really well.


5. Transfer the mixture into your crock pot, spread it out and let it cook on high for three hours.


This hash brown casserole turned out really nice and crispy. Even though it was cooked in the crock pot, it tasted like it came right out of the oven.

This is the perfect Friday or Saturday night dinner when you want a good meal without a lot of effort.


1. Chop up two breasts from the rotisserie chicken and some romaine lettuce.


2. Get a tortilla (flavored or plain), and add in the chicken, the lettuce, some shredded Parmesan and some creamy Caesar dressing by stacking them on top. Do the best that you can to fold them up.


This was such an easy meal to get put together, but it is really filling. Moreover, it is pretty nutritious, considering how simple and easy it is to get on the table. I served it with some Dot’s pretzels and it was a great dinner for my family.

This is such a fun recipe that uses a ton of fresh fruit and simple ingredients.


1. Chop up about two or three cups of chicken.


2. Quarter some seedless grapes, and chop up some apples into tiny bite-sized pieces.


3. Mix the chicken, grapes, apples and some dill pickles, add some salt and some pepper and a little bit of sugar.


4. Add in some almond slices and some apple cider vinegar along with three heaping tablespoons of mayonnaise, and mix well again.


Together with some crackers and avocado, this salad made for a great light dinner.

1. Start by chopping up three large potatoes and adding a large bag of frozen mixed vegetables.


2. For the topping, mix together one stick of melted butter, one cup of flour, and one cup of milk. Stir that together until it is well combined.


3. Into the casserole dish, add about two or three cups of chopped rotisserie chicken. Top the chicken with the vegetables and pour in a batch of homemade cream of chicken soup.


4. Pour over the topping that you mixed together earlier. Try to spread it around as evenly as you can.


5. Bake this in a 400 degree oven for 45 minutes or so.


This is a super simple twist on the traditional chicken pot pie.
