I hope you have access to lots of eggs in your backyard. If you do not, eggs have finally gone down in price, and they make the best staple item for the cheap recipe ideas I’m sharing with you now. I saw them at Aldi the other day for about a dollar a dozen.


You cannot beat the quality of protein that you get from an egg for less than ten cents per serving. So if you do not have an overabundance of eggs at the moment, store these recipes away in your mind for now.


Then, whenever you do get a couple dozen eggs in your hot little hands, you can make my easy recipe ideas for your family.

1. Scrambled eggs

Scrambled eggs are one of my favorite affordable egg dishes for breakfast. And a well-seasoned iron skillet is your friend in the kitchen, so I'm going to begin making scrambled eggs in mine.

My oil of choice is always coconut oil. I'm out of coconut oil today though, so I'm going to use butter instead. It is probably half a tablespoon of butter for two eggs on medium-high heat.

Okay, while that heats up, I'm going to crack my eggs and use a fork to scramble them.

I know that my butter is getting hot, so I'm going to pour in the eggs.

Now, I can use my wooden spoon to go around and around, allowing all of the eggs to cook. It's all in allowing it to cook at the very beginning after you have heated the pan up perfectly, which keeps them from sticking.


2. Tater tot casserole

Next, let's make a breakfast tater tot casserole, which is another one of my favorite budget-friendly egg recipes. It's going to use a lot of eggs.

I have some tater tots in the freezer that I picked up at Aldi, but if you don't have any tater tots at home, you can also use potatoes.

We are going to put this casserole together super easy. I'm going to crack twelve eggs, and I have bacon cooking in the iron skillet behind me. I'm going to add about a teaspoon of salt and half a teaspoon of black pepper.

To prepare my nine-by-thirteen-inch dish, I'm going to spritz it with olive oil.

Then, I'm going to pour the tater tots on the bottom of the baking dish and press them down gently to make sure they're in one layer.

I'm going to sprinkle about two cups of freshly shredded cheese on top of the tater tots and crumble the bacon on top of that.

Next, pour the scrambled eggs on top of the bacon then top with half a cup of shredded cheese.

After that, I'm going to cook it in a four-hundred-degree oven. I'll check it after forty-five minutes and make sure the eggs have cooked through.


3. Ham, egg, and cheese cups

Okay, now I want to try making some ham, egg, and cheese cups in a muffin tin using deli-sliced ham, shredded cheese, and a dozen eggs.


I am going to make half of these fried eggs or whole eggs, and then I'm going to scramble up the other eggs and see how they compare.

I'm going to begin by taking a twelve-cup muffin tin and spraying it with olive oil.

Then, I'm going to take two pieces of ham for each cup and use them as a liner and a base for the recipe.

I'm going to add about a tablespoon of cheese to each of the cups.

In six cups, I'm going to crack an egg and break it right into the cup.

Then in the other six cups, I'm going to take scrambled eggs and add them to the other ham cups.

Next, I'm going to cook them at three-hundred-fifty-degrees for fifteen minutes.

I really can’t believe how simple this recipe is and how good it tastes. This is one of those elegant recipes that takes no time at all, is affordable to make, and is going to be a crowd-pleaser.


4. Meringue cookies

In my mind, meringue cookies are associated with a sweet friend of mine. Anytime I go to visit her, we always enjoy these cookies, so I am making a new batch today.

We're going to start by separating four eggs and adding the egg whites only to my mixing bowl.

Next, I’ll add one and a half teaspoons of cream of tartar and an eighth of a teaspoon of salt.

I'm going to mix these three ingredients on low until they become foamy and are well incorporated.

Then, I'm going to turn my mixer on high and add one cup of sugar. You have to add the sugar slowly, so add about a tablespoon or two of sugar every fifteen seconds or so.

Allow it to beat well and incorporate before you add the next batch.

You'll know that the meringue is well formed and ready whenever it is shiny, thick, and holds a stiff peak.

I'm going to add about two teaspoons of vanilla flavoring, but you can add almond flavor or even peppermint flavor as well.

I have my oven preheating to two-hundred-twenty-five degrees, and I'm going to pipe the cookies onto a lined cookie sheet, making sure they don't touch but keeping them close together.

Lastly, I'm going to bake them in the oven for one hour then turn the oven off for two hours, allowing them to cool and set well. When they are done, they will be crispy, fluffy, and airy.


Easy recipe ideas
